I promise once you make this chocolate cake it will become your new favourite recipe! It can be dressed up or down and is a great birthday cake option!
You Will Need:
For the Cake:
6oz Caster sugar
4oz Self-raising flour
2oz Cocoa powder
6oz Melted unsalted butter
3 Eggs
1 Teaspoon of instant coffee powder
Splash of milk
For the Ganache:
150g Dark chocolate (or 75g milk chocolate, 75g dark chocolate is nice too for a sweeter ganache!)
pinch of salt (this sounds like a strange thing to add to a ganache but it really helps to bring out the flavour of the chocolate!)
150ml Double Cream
Method:
Preheat the oven to 180 degrees celsius (fan).
Add all the cake ingredients to a large bowl and whisk until it forms a smooth batter.
Spoon the mixture into a lined and greased cake tin.
Bake in the middle of the oven for around 25 - 30 minutes. To check the cake is cooked stick a skewer into the middle of the cake and check in comes out clean.
Transfer the cake to a plate.
To make the ganache break the chocolate up into a microwaveable safe bowl and pour over the double cream and pinch of salt.
Microwave at 30 second bursts until the cream begins to bubble.
Stir the mixture until smooth and glossy (you will think it's not coming together... keep mixing - it will!)
Pour the ganache over the cake and allow it to drizzle down the sides.
Serve ideally whilst warm! Enjoy!
