Poppy Seed Bagels

I first had this amazing CBA bagel in Bagelman Brighton and I have been obsessed ever since! Here is the recipe for making them at home.

Bagels (Makes 4) (credit to the Gourmet Traveller blog for this amazingly simple recipe!)


  • 25g butter, chopped

  • 125 ml milk

  • 1 tbsp caster sugar

  • 1 tsp dried yeast

  • 1 egg, separated

  • 250g strong white bread flour

  • For scattering: poppy seeds


METHOD

  • 1 Melt butter in a saucepan over low heat, add milk and sugar, stir to dissolve sugar, heat until lukewarm, then remove from heat.

  • 2 Add yeast, stand until foamy (10 minutes), then whisk in eggwhite and ½ tsp salt.

  • 3 Combine flour and yeast mixture with a spoon, then knead on a floured surface for 5 minutes or until springy to touch.

  • 4 Cover with cling film and stand until doubled in size (30 minutes-1 hour).

  • 5 Divide dough into 4 pieces and, working with one piece at a time, roll on a lightly floured surface into a ball (if dough is too sticky, add a little extra flour). Dust your thumb lightly in flour and push it through the centre of the ball to make a hole. Spin the ball around your fingers to enlarge the hole (make the whole bigger than you think as they will puff up!). Place each bagel on a bagel trayr and cover with a tea towel, then stand until slightly risen (15-20 minutes). Meanwhile, bring a large saucepan of water to the boil and preheat oven to 200C.

  • 6 Carefully slide bagels into water in batches and simmer, turning once, until slightly puffed (20-30 seconds each side. Remove bagels with a slotted spoon and transfer to a tray lined with baking paper, leaving space between each.

  • 7 whisk the egg yolk in a small bowl, brush over bagels, scatter with poppy seeds and bake until golden (18-20 minutes). Set aside to cool.

Bagelman CBA Filling

- 2 avocados peeled and sliced

- 2 chicken breasts - seasoned with salt and pepper and baked for 20 minutes, cooled and sliced

- 6 rashers of streaky bacon, grilled until crunchy and cooled

- mayo to taste


Method:

- slice the bagels in half and spread with mayo, then assemble the avocado, chicken and bacon and add more mayo, salt and pepper.


- Put the lid of the bagel on and heat in the oven for a few minutes before serving warm immediately.
