Simple Student Chow Mein

This is such a quick and easy recipe! I have put the amounts to make enough for one person as it serves as an ideal uni dinner for one, however the quantities can easily be scaled up for more people! You really can add whatever you have in the fridge! This recipe is also very easy to make vegan friendly by leaving out the prawns and using rice noodles as shown in the video below.

(Serves One)


Chow Mein Sauce:

- 2 tablespoons soy sauce

- 1 tablespoons tomato ketchup

- 2 teaspoons of honey

- Juice of half a lemon


Other Ingredients:

- Vegetables of your choice (I like to use grated carrot, red pepper, mange tout and broccoli)

- 2 Cloves chopped garlic

- Handful of cashew nuts

- 1 Tablespoon sesame seeds

- 2 Spring onions, chopped

- 1 nest of noodles

- Handful of prawns


Method:

  1. Heat some oil in a wok or frying pan and throw in your vegetables, garlic, 1 of the spring onions, cashew nuts and sesame seeds. (If adding chicken or prawns cook before adding vegetables!)

  2. Allow the vegetables to soften for a couple of minutes, stirring occasionally.

  3. In the mean time add the sauce ingredients to a bowl and mix until combined.

  4. Once the vegetables are softened add the sauce to the pan and turn the heat to low and simmer gently to allow the sauce to thicken.

  5. Cook your noodles according to packet instructions and then add to the vegetable pan.

  6. Stir to combine then sprinkle with chopped spring onion and a few more sesame seeds.

  7. Enjoy!
