Pops' Ghanaian Peanut Butter Chicken Stew

My Pops came to England from Ghana in the 60’s to study accountancy in London and brought with him lots of delicious recipes! Recently, we were chatting about his favourite Ghanaian dishes and this was one of his top choices, so I thought I would give it a go!


Sharing food is such a big part of Ghanaian culture - I never remember a time that Pops has turned up at our house without armfuls of food! You Will Need:

- 3 large salad tomatoes

- 2 red onions

- 1/2 a scotch bonnet chilli pepper

- 4 cloves of garlic

- Inch of peeled fresh ginger

- 8 chicken thighs

- 1 teaspoon paprika

- 1 teaspoon Cayenne Pepper

- Tablespoon tomato puree

- big scoop of smooth peanut butter

- 1 teaspoon dried thyme

- 2 bay leaves

- teaspoon Dunns river chicken seasoning

- 250ml Chicken stock

- 1 large potato, peeled and chopped

- big handful of spinach

- rice to serve






Method:

- In a food processor blend the tomatoes, 1 red onion, scotch bonnet, garlic and fresh ginger with a splash of water. Set aside.


- Now in a tray sprinkle a packet of chicken thighs with paprika, cayenne pepper and salt and pepper. Mix well then brown well in a large pan and set aside.


- In the same pan fry off your chopped red onion and tomato purée. Then add the blitzed tomato mixture from earlier and cook until reduced.


- At this point add in dried thyme, bay leaves and African chicken seasoning (we use Dunn’s River from the world food aisle!), a couple of big scoops of smooth peanut butter and chicken stock.


- Add the browned chicken and a chopped potato into the pan and cook until the sauce has thickened, this will take around 20-30 minutes. In the last 5 minutes stir in some spinach and leave to wilt.


- Serve with rice (and fried plantain if you want to be really authentic!)
