'Pain Farci' - Picnic Loaf

‘Pain Farci’ just means ‘stuffed bread’. This recipe is basically just family size layered sandwich which is perfect for taking on picnics! I used pesto, roast chicken, and a jar of roast peppers in mine - but you really can be creative with what you choose to put in yours!



You Will Need:

⁃ Loaf of good quality crusty white bread (use my recipe for pot loaf if you want to make your own!)

⁃ Leftover roast chicken (or buy good quality precooked chicken breast)

⁃ Few slices of Salami

⁃ Half a jar of pesto

- half a small jar of artichokes (optional)

⁃ Half a jar of roasted peppers

⁃ Half a bunch of fresh basil

⁃ Plenty of green salad

⁃ Sliced cucumber

⁃ Drizzle of extra-virgin olive oil

⁃ Salt and Pepper


Method:

- Slice your loaf in half (lengthways) and hollow out using a spoon (save this bread for making breadcrumbs.)


- Spread your pesto evenly across the base of the bread and begin to layer up your fillings (starting with your meat at the bottom and salad and basil on top).


- Drizzle your fillings with a little olive oil and season well with salt and pepper.


- Replace the lid of your bread and wrap in clingfilm. Then place a heavy book on top to weigh the bread down and chill in the fridge for a hour.


- Slice into sandwiches when you arrive at your picnic!
