‘Mojitarita’s’ - The perfect zingy summer cocktail!

The lime and mint in this drink makes it so refreshing - perfect for the hot weather we have been having recently! I have given you the quantities for two, but you can double or half the recipe as you like!


You Will Need - Serves 2:

- Bunch of fresh mint

- 2 Teaspoons of light brown sugar

- Juice of 2 limes

- Good glug of gin

- Plenty of ice

- Chilled lemonade

- Demerara sugar


Method:

- In a pestle and mortar, muddle together a few springs of mint with a 2 teaspoons of brown sugar until the mint is bruised and the sugar has started to break down.


- Transfer the mixture into a cocktail shaker and add a good glug of gin, the juice of 2 limes and a handful of ice.


- Shake vigorously.


- In the mean time, dampen the rim of your cocktail glass with lime juice by running half a lime round the glass, then twirl the glass onto a plate of demerara sugar. Add a wedge of lime to decorate.


- Now strain your minty syrup into your cocktail glass and top up with chilled lemonade (and ice if you would like).
