In our family, it isn't Christmas without these very special sausage rolls. Every person who I have made them for have been converted!
These sausage rolls are warm and christmassy thanks to the addition of curry spices which make for a really nice twist on a classic.
The original recipe is by the wonderful Lotte Duncan, who's Instagram and cookbook I enjoy so much! I will attach her YouTube video below this recipe so you can see her doing what she does best!
I have made a few very very small adjustments to her recipe but both work just as well.
You Will Need: (Makes about 25)
- 1 Onion, chopped
- 5 Cloves of garlic, chopped
- Glug of olive oil
- 1 heaped teaspoon ground cumin
- 1 heaped teaspoon ground coriander
- 1 teaspoon ground turmeric
- 1/2 teaspoon chilli powder
- 1/4 teaspoon salt
- 2 teaspoon garam masala
- 75ml Red Wine
- Zest of 1 lemon
- Juice of 1 lemon
- 6 Pack of good quality sausages
- Block of puff pastry / of ready rolled if you are feeling extra lazy but it will make fewer sausage rolls!
- 1 egg beaten with 1/2 teaspoon salt
Method
- Preheat the oven to 180oC fan.
- Heat the oil in a non-stick frying pan and add the onion and garlic, cook gently until soft, for about 10 minutes.
- Now, add the spices and cook for a minute or so to release the flavour and oils. Pour in the red wine and let it bubble away and reduce for a couple of minutes. Remove from the heat, add the lemon juice and zest then leave to cool.
- Cut down the centre of each sausage, squeeze out the sausage meat into a medium bowl, add the cooled spice mixture and mix well.
- On a floured worksurface, roll out the pastry to a rectangle.
- Take a handful of sausage mixture and shape into a long sausage shape, then place at the top of the pastry.
- Brush the pastry with egg wash and fold oven the sausage meat, then press the edges of the pastry firmly together. (for tips watch Lotte's video below)
- Cut the pastry wrapped sausage off and repeat with the remaining pastry and sausage meat.
- Cut each long sausage roll into bitesize pieces, then brush with egg wash, slash with a knife.
- Place on a baking sheet lined with baking paper and bake for around 15 - 20 minutes or until completely cooked and golden.
- Leave to cool a little before eating!
- Freeze any sausage rolls you don't eat and reserve until needed.
