Homemade Pesto

So easy, yet so worth the bit of extra effort, this pesto beats a jar any day!

You Will Need (serves 4)

for the pesto

- One large bunch of basil

- half large a bunch of parsley

- 50g Pine Nuts

- 5 Large garlic cloves, peeled

- Zest and juice of 2 lemons

- 100ml of Extra virgin olive oil

- splash of water

- 50g Parmesan, grated

- 1/2 red chilli, chopped and deseeded (optional)

- Sea salt and pepper

other

- Cherry tomatoes

- Spaghetti for four people (amount depends on your hunger levels!)


Method:

- In a food processor blend together all of the pesto ingredients until smooth, then taste. Add salt and pepper according to your own palette.

- In a frying pan, fry off some halved cherry tomatoes until caramelised.

- Cook the pasta according to packet instructions, then drain and drizzle with olive oil before mixing in the pesto.

- Add extra pine nuts, tomatoes and seasoning then pile the pasta onto a large serving dish and garnish with basil and more parmesan.
