Ghanaian Food and Culture Chat with Pops - And a Plantain Recipe!

This Black History Month I sat down with my Pops to chat about his Ghanaian heritage and the impact it has had on his on his love for food.


A bit about Pops:

Pops was born in the coastal town of Anomabo before later moving to the Ghana’s Capital - Accra. In the 60’s he moved to London to study a degree in accountancy, later he decided to settle in the UK, building a successful career as a accountant for the poverty relief charity Oxfam.


These days he balances his time between both Ghana and the UK but he has never lost his love for Ghanian food and cooking.

Pop's Plantain Recipe:

- 1 Ripe Plantain, Sliced

- 1 Tablespoon grated ginger

- 1/4 teaspoon chilli flakes

- Sprinkle of salt

- 2 Tablespoons of sunflower oil


Method:

- Slice the plantain into small rounds.

- grate over the ginger, chilli flakes and salt.

- In a frying pan heat some oil to a medium heat, place the plantain in the pan and cook for a few minutes on both sides until golden brown.
