Ultimate Fried Chicken Burgers

These fried chicken burgers have a delicious crunchy coating but are perfectly moist inside, plus they're cooked in the oven so they aren't as unhealthy!

You Will Need (Serves 4)

For the Marinade

- 2 large chicken breasts

- 2 cups of milk

- 2 tablespoons of Dunn's River chicken seasoning

- 1 tablespoon garlic granules

- 2 teaspoons paprika

- 1 teaspoon dried thyme


For the Coating

- 4 heaped serving spoons of plain flour

- 2 heaped serving spoons of cornflour

- 2 teaspoons of baking powder (helps with the crunch)

- 2 tablespoons Dunn's River chicken seasoning

- 1/4 teaspoon salt

- 1 teaspoon onion salt

- 2 teaspoons garlic powder

- 1 tablespoon paprika

- 1 teaspoon of dried thyme

- grind of black pepper

- 100g of melted butter

- 2 tablespoons olive oil


For the burger

- 4 brioche buns

- 2 tablespoons mayo

- 2 tablespoons ketchup

- 8 rashers of bacon, grilled

- lettuce


Method:

The Chicken

- Start by marinating the chicken. If you have time, do this a few hours prior to cooking, however if time is tight 20 minutes will suffice.

- Pour the milk into a deep sided dish and add in the seasoning and stir well. Then take your chicken breasts, bash until thin with a rolling pin and cut into 4. Add the chicken to the milk and spices mix and leave to marinade in the fridge for around 4 hours.

- Once the chicken has marinaded, preheat the oven to 200oc.

- Now mix the flours, baking powder, and spices together. Then take each piece of chicken out of the marinade dish and dip into the flour, then back into the milk and then back into the flour mix for one final time. The chicken should now be well coated.

- Place the coated chicken onto a lined baking tray.

- Before you put the chicken into the oven, mix the melted butter and oil together then drizzle half over the top of each chicken piece. Place into the oven and cook for around 15 minutes.

- After 15 minutes, remove the chicken from the oven, flip them over and then drizzle the other half of the chicken with the remaining melted butter and oil mix. Place back into the oven for a further 10/15 minutes until crisp and golden.


The Burger

- To assemble the burger, half and lightly toast the brioche buns.

- Then, mix together the mayo and ketchup and spread on one half of the brioche.

- Pile on the chicken, bacon and salad, then add more sauce and top with the other half of the brioche bun.

- Serve with plenty of skin on fries.
