'Fougasse' is a French focaccia style bread that is flavoured with fragrant herbs. It is easily identifiable because of its flower like shape. This recipe is so easy and makes a good nibble.
You Will Need (Makes 1)
- 1.5 cups plain flour
- 1.5 teaspoons of dried yeast
- 1 teaspoon table salt
- 1 teaspoon dried rosemary
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1 tablespoon extra virgin olive oil
- 135ml warm water
- sea salt
- chopped fresh rosemary
Method
- In a bowl combine the flour, salt, yeast and dried herbs.
- Add in the olive oil and water then knead for 5 minutes. The dough is sticky so if you have a stand mixture I would recommend using it as it means you don't need to add as much flour.
- Shape the dough into a ball, and place in a oiled bowl. Leave to proof for at least 1 hour (or until doubled in size.)
- When the dough has risen, knock back slightly and shape it into an oval shape.
- Slit the dough down the middle, then make 3 slashes on either side and hollow out with your fingers. (as shown in the photos below)
- Leave to proof for another 30 minutes. In the mean time preheat your oven to 220oc.
- Once the dough has had its second proof, brush with olive oil and season with a sprinkle of sea salt and chopped rosemary. (at this stage you can add any toppings you desire e.g. pancetta, olives etc.)
- Bake for 15 - 20 minutes or until golden brown. Leave to cool slightly then brush on a little more olive oil and serve warm with balsamic vinegar.
You can be creative with toppings - either stick to classic herbs or add sun-dried tomatoes, pancetta etc.
