These little bite size biscuits are perfect for using up any left over Easter eggs!
You Will Need (Makes 20 small biscuits)
- 50g Icing sugar
- 75g Soft Butter
- Yolk from one large egg
- 1/2 teaspoon of vanilla bean paste
- 150g Plain Flour
- 1 small pack (80g) of Mini Eggs
- 65g Leftover Easter egg, melted
Method:
- Preheat the oven to 180oc.
- In a large bowl, cream together the butter and sugar until pale and fluffy.
- Stir in the vanilla bean paste and egg yolk
- Then add the plain flour and stir until the mixture forms a dough.
- Wrap the dough and refrigerate for 5 minutes.
- Then roll out the dough, cut into 20 rounds using a biscuit cutter and place on a lined baking tray.
- Place a single Mini Egg into the centre of each biscuit then bake for 10-12 minutes until pale golden.
- Leave the biscuits to cool on the baking tray, then melt your Easter egg chocolate and pipe or drizzle over the biscuits.
