A simple but delicious mid-week dinner!
Serves 2:
Ingredients:
knob of butter
1 banana shallot, chopped
handful of kale
1 teaspoon chopped fresh dill
zest and juice of Half a lemon
1 teaspoon Dijon mustard
150g Smoked salmon, chopped into small pieces
2 tablespoons double cream
Pasta
Method:
Put your pasta on to boil in a pot of well-salted water.
Melt the butter in a frying pan, and then add the shallots and cook until soft and translucent.
Add the kale, lemon zest and dill
Once the kale has wilted add the chopped smoked salmon pieces and cook until pink.
Add in a tablespoon of pasta water, the Dijon mustard, cream, salt and pepper.
Finally, stir in the cooked pasta and finish with a squeeze of lemon juice.
Serve with more chopped dill sprinkled on the top.
