I love these tartlets, they only take minutes to put together and they are a fabulous way to cater to any vegan or vegetarian guests over Christmas.

You will need:
- 1 large banana shallot
- 2 tablespoons olive oil
- 1 tablespoon good quality balsamic vinegar
-2 tablespoons of maple syrup
- salt and pepper
- a few sprigs of fresh thyme
- 1/2 roll of puff pastry
Method:
- Pre-heat the oven to 180oc fan
- Peel your shallot and slice into thin rounds
- Line a baking tray with baking paper and spread with the oil, balsamic, maple syrup, thyme and salt and pepper
- Place your shallots onto your baking tray and flip so that both sides of your shallot is covered with your oil / balsamic mixture.
- Roll out your puff pastry and cut out small circle shapes, then place the circles of pastry over each piece of shallot
- brush the top of the pastry with a little more oil and bake in the oven for about 20/ 25 minutes or until golden.
- When the tarts are cooked, flip them over to reveal the beautiful shallot and serve warm.
