This is such a good warming pudding to make as we head into Autumn!
You Will Need
- Big squeeze of golden syrup
- 4oz Self raising flour
- 4oz Caster sugar (preferably golden caster!)
- 4oz Melted Butter
- 2 Large Eggs
- 1 Teaspoon Vanilla Extract
- 2 Tablespoons milk
Method:
1. Preheat the oven to 180oc.
2. Begin by greasing a shallow 20cm cake tin with butter, then squeeze in enough golden syrup to coat the bottom on the tin (smooth the syrup around with a spoon if needed).
3. In a large bowl combine all the other cake ingredients and then mix well using an electric whisk, until the batter is light and fluffy.
4. Pour the cake batter over the syrup and spread round the tin evenly.
4. Fill a large baking tray with about 1cm of cold water and then sit the cake tin in the water - this will help create a steamed cake texture whilst cooking.
5. Place the cake in the oven for 30mins or until golden. You will know the cake is done if a knife dipped in the middle of the cake comes out clean.
6. Serve warm, with plenty of double cream!
